Ingredients
✓ 2 cups citrus juice (such as orange, lemon, lime, or a mix)
✓ 1 cup sugar
✓ 1 cup water
✓ 1 tablespoon gelatin
Instructions
✓ Measure the citrus juice, sugar, and water into a medium saucepan
✓ Heat the mixture over medium heat, stirring until the sugar completely dissolves and the liquid becomes clear
✓ While the liquid simmers, sprinkle the gelatin over ¼ cup cold water in a small bowl and let it bloom for 5 minutes
✓ Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved
✓ Return the pan to low heat for 30 seconds, just to ensure the gelatin is evenly incorporated
✓ Pour the hot mixture into a shallow glass dish, spreading it evenly with a silicone spatula
✓ Allow the mixture to cool at room temperature for 10 minutes
✓ Cover the dish with plastic wrap and transfer it to the refrigerator
✓ Chill for at least 2 hours, or until the gel is firm enough to cut cleanly
✓ Run a thin knife under hot water, wipe dry, and slice the chilled gel into cubes or decorative shapes
✓ Arrange the pieces on a chilled serving platter, garnish with thin citrus zest ribbons and a sprig of fresh mint
✓ Serve immediately, allowing each bite to melt slowly on the tongue
Notes
