✓ 40 g fancy molasses (2 tablespoons)
✓ 5 ml fine sea salt
✓ Zest of 1 large orange
✓ Dehydrated orange rings, finely chopped (optional)
✓ 1 teaspoon ground cinnamon
✓ 0.5 teaspoon ground ginger, or to taste
✓ 0.25 teaspoon freshly grated nutmeg, or to taste
✓ 0.25 teaspoon ground cardamom
✓ Pinch of ground clove
✓ Pinch of ground allspice
✓ 1 teaspoon pure vanilla extract
✓ 300 g all-purpose flour (2 and 1/2 cups)
✓ 150 g icing sugar (about 1 and 1/4 cups)
✓ 30-45 ml freshly squeezed orange juice (2-3 tablespoons)
✓ 30-40 ml Cointreau (2-3 tablespoons)
✓ Pinch of ground clove for the glaze
Instructions
✓ Preheat oven to 180°C / 350°F and line a baking sheet with parchment paper.
✓ Cream butter, honey, and molasses in a large bowl until light and fluffy.
✓ Gradually add fine sea salt, mixing well after each addition.
✓ Combine flour, cinnamon, ginger, nutmeg, cardamom, cloves, and allspice in another bowl. Mix thoroughly.
✓ Add dry ingredients to the butter mixture while stirring on low speed, then mix in vanilla extract.
✓ Chill dough for 15-20 minutes before rolling out and cutting into shapes.
✓ Bake cookies at 350°F for 8-10 minutes or until golden brown.
✓ Allow to cool, then drizzle with glaze made from icing sugar, orange juice, and Cointreau. Sprinkle with dehydrated orange rings if desired.
Notes
Chill the dough to help it hold its shape better during baking. Adjust spice levels as desired to avoid overpowering flavors.
