Ingredients

✓ 1.5 lbs flank steak or top round
✓ 2 large Yukon gold potatoes
✓ 4 cloves garlic, minced
✓ 3 tbsp butter
✓ 1 tsp thyme leaves
✓ 1/2 tsp paprika
✓ Salt and pepper to taste

Instructions

✓ Preheat a pan over medium heat.

✓ Sear the beef slices until browned on all sides. Set aside.

✓ Add minced garlic to the same pan, sauté for 30 seconds.

✓ Mix in butter, thyme, paprika, salt, and pepper. Cook for another minute.

✓ Place the beef back into the pan with the garlic butter mixture.

✓ Transfer everything into a slow cooker.

✓ Peel and cube potatoes, add to the slow cooker.

✓ Cook on low heat for 8 hours or high for 4 hours.

✓ Serve hot, garnished with fresh rosemary.

Notes

Make sure to brown the beef thoroughly before adding it to the slow cooker. Use real butter for richer flavor.
