Ingredients
✓ 2 lbs beef chuck, cut into bite-sized chunks
✓ 3 large carrots, peeled and sliced
✓ 4 medium potatoes, peeled and cubed
✓ 1 large onion, chopped

Instructions
✓ In a large pot or slow cooker, brown the beef chunks until well-seared.
✓ Add chopped onions and minced garlic; sauté until translucent.
✓ Stir in tomato paste and cook for another minute.
✓ Pour in beef broth, add thyme, bay leaves, salt, and pepper. Bring to a boil.
✓ Reduce heat and simmer for 2-3 hours (or longer if using a slow cooker).
✓ Add sliced carrots and cubed potatoes; continue cooking until vegetables are tender.
