Instructions
✓ Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
✓ In a large mixing bowl, combine the bran cereal, whole wheat flour, baking powder, baking soda, and salt. Mix well.
✓ In another bowl, beat the eggs and mix in the brown sugar or honey, milk or buttermilk, vegetable oil or melted butter, and extract of your choice (cinnamon, nutmeg, or vanilla).
✓ Pour the wet mixture into the dry ingredients and stir until just combined. Be careful not to overmix.
✓ Fold in the raisins or other dried fruit and chopped nuts.
✓ Divide the batter evenly among the prepared muffin cups.
✓ Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
✓ Allow muffins to cool in the pan on a wire rack for about 5 minutes before removing.
